Ingredients:

For the Pastry:

- 1 1/4 cups all-purpose flour

- 1/4 teaspoon salt

- 1/2 cup cold unsalted butter, cut into small cubes

- 1/4 cup ice water


For the Filling:

- 1/2 cup unsalted butter, melted

- 1 cup packed brown sugar

- 1/4 cup corn syrup

- 1/4 cup pure maple syrup (or use more corn syrup if you prefer)

- 2 large eggs

- 1 teaspoon pure vanilla extract

- 1/2 cup raisins or pecan halves (optional)


Instructions:

1. Prepare the Pastry:

- In a mixing bowl, combine the flour and salt.

- Add the cold cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

- Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough.

- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.


2. Preheat the Oven:

- Preheat your oven to 375°F (190°C).


**3. Roll Out the Pastry:**


- On a floured surface, roll out the pastry to about 1/8-inch thickness.

- Use a round cookie cutter or a glass with a diameter of about 3 inches to cut out circles from the pastry.

- Carefully press each pastry circle into the cups of a muffin tin, forming small tart shells.


4. Prepare the Filling:

- In a mixing bowl, whisk together the melted butter, brown sugar, corn syrup, maple syrup, eggs, and vanilla extract until well combined.

- If you're using raisins or pecans, place a few in the bottom of each tart shell.


5. Fill the Tarts:

- Pour the butter and sugar mixture into each tart shell, filling them about 2/3 full. Be careful not to overfill, as the filling will expand during baking.


6. Bake:

- Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the pastry is golden brown and the filling is set. Keep an eye on them as baking times may vary.


7. Cool and Enjoy:

- Allow the butter tarts to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.


8. Serve:
