Nanaimo bars
are a classic Canadian dessert with three delicious layers: a crumbly chocolate
coconut base, a creamy custard-flavored middle, and a glossy chocolate topping.
Here's a simple recipe to make Nanaimo bars:
Ingredients:
For the Bottom Layer:
- 1/2 cup
unsalted butter, melted
- 1/4 cup
granulated sugar
- 1/3 cup
unsweetened cocoa powder
- 1 large
egg, beaten
- 1 teaspoon
pure vanilla extract
- 2 cups
graham cracker crumbs
- 1 cup
sweetened shredded coconut
- 1/2 cup chopped
walnuts or almonds (optional)
For the Middle Layer:
- 1/2 cup
unsalted butter, softened
- 2 cups
powdered sugar (confectioners' sugar)
- 2
tablespoons vanilla custard powder (such as Bird's)
- 2
tablespoons milk
For the Top Layer:
- 4 ounces
(about 1/2 cup) semi-sweet chocolate chips
- 2
tablespoons unsalted butter
Instructions:

Prepare the Bottom Layer:
- In a
medium-sized bowl, combine the melted butter, granulated sugar, cocoa powder,
beaten egg, and vanilla extract.
- Stir in
the graham cracker crumbs, shredded coconut, and chopped nuts (if using). Mix
until well combined.
- Press the
mixture firmly into the bottom of a greased 9x9-inch (23x23 cm) square baking
pan. Use the back of a spoon or your fingertips to smooth it out evenly.
2. Prepare the Middle Layer:
- In another
bowl, beat together the softened butter, powdered sugar, vanilla custard
powder, and milk until smooth and creamy.
- Spread
this custard layer evenly over the bottom layer in the pan. You can use a
spatula to make it smooth.
3. Prepare the Top Layer:
- In a
microwave-safe bowl, combine the semi-sweet chocolate chips and 2 tablespoons
of butter.
- Microwave
in 20-30 second intervals, stirring after each interval, until the chocolate
and butter are completely melted and smooth.
- Pour the
melted chocolate evenly over the custard layer.
4. Chill and Set:
- Place the
pan in the refrigerator for at least 2-3 hours, or until the bars are firm and
set.
5. Cut and Serve:
- Once the
Nanaimo bars have been set, remove them from the refrigerator.
- Using a
sharp knife, cut them into squares or bars. You can dip the knife in hot water
to make smoother cuts.
- Serve and
enjoy! Nanaimo bars are best when stored in the refrigerator.
