DAMPER
Damper is a traditional Australian bush bread that's simple to make and can be prepared over a campfire or in an oven. It's a versatile bread that can be enjoyed on its own or with various toppings like butter, jam, or golden syrup. Here's a basic recipe for making damper:
Ingredients:
- 3 cups
self-raising flour
- 1 teaspoon
salt
- 1
tablespoon butter or oil
- 1 cup
water (approximately)
Instructions:
1. Prepare the Fire or Oven:
- If you're making a damper over a campfire,
prepare a fire with hot coals. You'll need a campfire with a bed of hot ashes
or a grate placed over the fire.
- If you're using an oven, preheat it to
350°F (175°C).
2. Mix the Dough:
a. In a large mixing bowl, combine the self-raising
flour and salt.
b. Add the butter or oil to the dry
ingredients and mix it in.
c. Gradually add the water while stirring.
You may not need the full cup of water, so add it slowly until the dough comes
together. The dough should be soft but not overly sticky.
3. Knead the Dough:
a. Turn the dough out onto a floured
surface.
b. Knead the dough for a few minutes until
it becomes smooth and elastic. This helps activate the gluten and ensures your
damper will rise properly.
4. Shape the Damper:
a. Shape the dough into a round or oval
loaf, about 1-2 inches (2.5-5 cm) thick.
5. Cook the Damper:
- Campfire Method:
a. Wrap the damper in aluminium foil,
leaving some space for it to expand while baking.
b. Place the wrapped damper on the hot
ashes or on a grill over the campfire.
c. Cook for about 20-30 minutes, turning
occasionally, until the damper is golden brown and sounds hollow when tapped.
d. Carefully remove the damper from the
fire and allow it to cool slightly before unwrapping and slicing.
- Oven Method:
a. Place the shaped damper on a baking
sheet or in a cast-iron skillet.
b. Bake in the preheated oven for about
30-40 minutes or until the damper is golden brown and sounds hollow when
tapped.
c. Remove from the oven and let it cool
for a few minutes before slicing.
6. Serve:
a. Slice the damper and serve it while it's
