LAMINGTONS
Lamingtons are delicious sponge cake squares coated in chocolate icing and desiccated coconut. Here's a classic recipe for making Lamingtons:
Ingredients:
For the Sponge Cake:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
For the Chocolate Icing:
- 3 cups powdered sugar (confectioner's sugar)
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons unsalted butter, melted
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
For Coating:
- 2 cups desiccated coconut
Instructions:
1. Prepare the Sponge Cake:
a. Preheat your oven to 350°F (175°C). Grease a 9x13-inch (23x33 cm) baking pan and line the bottom with parchment paper for easy removal.
b. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set this dry mixture aside.
c. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done with an electric mixer or by hand.
d. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
e. Gradually add the dry mixture to the wet mixture, alternating with the milk, starting and ending with the dry mixture. Mix until just combined.
f. Pour the batter into the prepared baking pan and smooth it out evenly.
g. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the centre comes out clean.
h. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
2. Cut and Coat the Cake:
a. Once the cake is completely cooled, cut it into equal-sized squares, typically about 2x2 inches (5x5 cm).
b. Place the desiccated coconut in a shallow bowl.
c. In a separate bowl, prepare the chocolate icing.
3. Make the Chocolate Icing:
a. In a mixing bowl, sift the powdered sugar and cocoa powder to remove any lumps.
b. Add the melted butter, milk, and vanilla extract to the sifted powdered sugar and cocoa mixture.
c. Stir until you have a smooth and glossy chocolate icing. If it's too thick, add a little more milk; if it's too thin, add more powdered sugar.
4. Coat the Lamingtons:
a. Using two forks or your hands, dip each cake square into the chocolate icing, making sure it's fully coated.
b. Allow any excess icing to drip off, and then roll the coated cake square in the desiccated coconut until it's evenly covered.
c. Place the coated Lamingtons on a wire rack to set.
5. Serve:
a. Allow the Lamingtons to sit for a few hours or overnight to allow the icing to set.
b. Serve your homemade Lamingtons and enjoy!
