Easy Homemade Kabsa Rice Recipe


Kabsa is a traditional Saudi Arabian dish known for its flavorful and aromatic rice cooked with a blend of spices and often accompanied by meat, such as chicken, lamb, or goat. Here's a basic recipe for making Chicken Kabsa Rice:

 





Ingredients:

Kabsa spice mix:

1.     Black cardamom

2.     Green cardamom

3.     White pepper

4.     Black pepper

5.     Cinnamon

6.     Nutmeg

7.     Mace

8.     Cinnamon

9.     Black caraway seeds

10.  Coriander seeds

Ground them and keep them in an airtight container.

 

For Chicken (marinate for an hour)

1.     Chicken legs

2.     Ginger paste

3.     Garlic paste

4.     Green chili paste

5.     Red chilli powder

6.     Kabsa spice mix

7.     Salt to taste

 

 

 For rice (soak for half an hour)

1.    Long-grain basmati rice

2.    Whole Cinnamon

3.    Whole Green cardamom

4.    Whole Cloves

5.    Chopped onion

6.    Chopped tomatoes

7.    Ginger paste

8.    Garlic paste

9.    Green chilli paste

10. Kabsa spice mix

11. Cashew

12. Almond

13. Raisins

14. Coriander leaves for garnishing (optional)

 

 

Instruction:

 

1.    In a pot heat the ghee, and add the whole spices. Then add the onion and fry it till the colour changes to pink or translucent. Then add ginger, garlic and green chilli paste. Add salt and fry them until the raw smell of ginger and garlic disappears.

 

2.    Then add the marinated chicken to the pot. Then add the tomatoes. Fry them till the chicken gets cooked and the tomatoes get mushy.

 

3.    After the chicken gets cooked take the chicken out from the pot and keep them aside. Then in the remaining spice of the pot, add the soaked rice, the required quantity of water, the Kabsa mix and salt to taste.

 

4.    Cover and seal the lid of the pot and let the rice cook till it cooks and rises.

 

5.    Meanwhile take another pan, add some ghee and fry the chicken from both sides till it changes colour to golden.

 

6.    Once the rice is cooked and fluffy, add the cashews, almonds, raisins and coriander for garnishing. Also, add the chicken on top of the rice and cover the lid for another 10 minutes.

 

Feel free to adjust the spice levels to your preference and add some fried onions as additional garnishes for extra flavour and texture.
