 Mantu: A Flavorful Afghan Delight

Recipe: Afghan Mantu (Steamed Dumplings)

 

Ingredients:

For the Dough:

- 2 cups all-purpose flour

- 1/2 cup water (approximately)

- 1/2 teaspoon salt

 

For the Filling:

- 1/2 pound ground beef or lamb

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1/2 teaspoon ground coriander

- 1/2 teaspoon ground cumin

- Salt and pepper to taste

- Cooking oil for sautéing

 

For the Tomato Sauce:

- 2 cups tomato sauce or puree

- 2 cloves garlic, minced

- 1 teaspoon ground coriander

- Salt and pepper to taste

 

For the Yogurt Sauce:

- 1 cup plain yogurt

- 1 clove garlic, minced

- Salt to taste

 

Instructions:

 

1. Prepare the Dough:

   a. In a mixing bowl, combine the all-purpose flour and salt.

  

   b. Gradually add water and knead the mixture until you have a soft, smooth dough. You may need a bit more or less water, so add it slowly.

 

   c. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

 

2. Prepare the Filling:

   a. In a pan, heat some cooking oil over medium heat.

 

   b. Add the chopped onions and minced garlic. Sauté until they become translucent.

 

   c. Add the ground meat and cook until it's browned and fully cooked.

 

   d. Season the meat with ground coriander, ground cumin, salt, and pepper. Mix well and cook for another couple of minutes.

 

   e. Remove the meat mixture from the heat and let it cool.

 

3. Assemble the Mantu:

 

   a. Roll out the dough on a floured surface into a thin sheet. It should be about 1/16 to 1/8 inch thick.

 

   b. Cut the rolled-out dough into 3-inch circles using a round cookie cutter or the rim of a glass.

 

   c. Place a small spoonful of the cooled meat mixture in the centre of each dough circle.

 

   d. Fold the dough circle in half to form a half-moon shape. Pinch the edges together to seal the dumpling, creating pleats along the edge to make it look like a little pouch.

 

4. Steam the Mantu:

   a. Line a steamer basket with parchment paper or cabbage leaves to prevent sticking.

 

   b. Arrange the mantu dumplings in the steamer, leaving some space between them.

 

   c. Steam the dumplings over boiling water for approximately 20-25 minutes or until the dough is fully cooked and the dumplings are heated through.

 

5. Prepare the Tomato Sauce:

   a. In a separate saucepan, heat some oil over medium heat.

 

   b. Add minced garlic and sauté briefly.

 

   c. Add tomato sauce or puree and season with ground coriander, salt, and pepper. Simmer for about 10 minutes.

 

6. Prepare the Yogurt Sauce:

   a. In a bowl, combine the plain yoghurt with minced garlic and salt. Mix well.

 

7. Serve the Mantu:

   a. Place the steamed mantu dumplings on a serving platter.

 

   b. Drizzle the tomato sauce over the dumplings.

 

   c. Serve the yoghurt sauce on the side for dipping.
