Ingredients:
For the Mussels:
- 2 pounds (about 1 kg) of fresh mussels, cleaned and
debearded
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 cup dry white wine
- 1 cup chicken or vegetable broth
- 1/2 cup heavy cream (optional)
- 2 bay leaves
- Fresh parsley, chopped, for garnish
- Salt and pepper to taste
For the Fries:
- 4 large russet potatoes, peeled and cut into thin strips
- Vegetable oil, for frying
- Salt to taste
Instructions:
Prepare the Fries:
1. Start by preparing the fries. Heat the vegetable oil in a
deep fryer or a large, deep pot to 325-350°F (165-175°C).
2. Rinse the cut potato strips under cold water to remove
excess starch. Pat them dry with paper towels.
3. Carefully add the potato strips to the hot oil in batches,
ensuring not to overcrowd the pot. Fry them until they are golden and crispy,
usually for about 2-3 minutes per batch. Remove them with a slotted spoon and
place them on paper towels to drain excess oil. Sprinkle with salt while they
are still hot. Keep the fries warm in the oven while you prepare the mussels.
Prepare the Mussels:
4. In a large pot or Dutch oven, melt the butter over medium
heat. Add the chopped onion and garlic, and sauté until they are soft and
translucent.
5. Add the white wine, chicken or vegetable broth, bay
leaves, and a pinch of salt and pepper. Bring the mixture to a simmer.
6. Add the cleaned mussels to the pot and cover it with a
lid. Steam the mussels for about 5-7 minutes or until they open. Discard any
mussels that remain closed.
7. If desired, stir in the heavy cream to create a creamy
broth.

8. Serve the Moules-Frites by placing a generous portion of
mussels in a bowl, ladling some of the flavorful broth over them, and
garnishing with chopped fresh parsley.
