Pumpkin pie is a quintessential Thanksgiving dessert, its rich, spiced filling symbolizing the warmth and flavours of the holiday season, often enjoyed with loved ones around the Thanksgiving table.
Ingredients:
For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cut into small pieces
- 2-4 tablespoons ice water
For the Pumpkin Filling:
- 1 can (15 ounces) pumpkin puree (not pumpkin pie filling)
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/4 cups evaporated milk or half-and-half
Instructions:
1. Prepare the Pie Crust:
a. In a mixing bowl, combine the flour and salt.
b. Add the cold, diced butter to the flour mixture.
c. Use a pastry cutter or your hands to work the butter into the flour until the mixture resembles coarse crumbs.
d. Slowly add ice water, one tablespoon at a time, while gently mixing, until the dough just comes together. Be careful not to overmix.
e. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Preheat the Oven:
Preheat your oven to 425°F (220°C).
3. Roll Out the Pie Crust:
a. On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter.
b. Carefully transfer the dough to a 9-inch pie dish. Trim any excess dough hanging over the edge.
4. Prepare the Pumpkin Filling:
In a large bowl, whisk together the pumpkin puree, sugar, cinnamon, ginger, cloves, and salt until well combined.
5. Add Eggs and Milk:
Whisk in the eggs one at a time until fully incorporated. Then, gradually whisk in the evaporated milk (or half-and-half) until the mixture is smooth.
6. Fill the Pie Crust:
Pour the pumpkin filling into the prepared pie crust.
7. Bake the Pie:
Place the pie in the preheated oven and bake at 425°F (220°C) for 15 minutes.
Reduce the oven temperature to 350°F (175°C) and continue baking for 40-50 minutes or until the pie is set. You can check for doneness by inserting a knife into the centre; it should come out clean when the pie is done.
8. Cool and Serve:
Allow the pie to cool completely on a wire rack before serving. You can serve it with whipped cream if desired.
